Roasted Chicken Thighs with Banana Curry Sauce

Ripe banana can be used to make a creamy, fruity curry sauce that goes perfectly with roasted chicken or chicken schnitzel. Using fruit creates a deliciously thick sauce with a perfect balance of savoury and sweet. Mango is another excellent alternative and crème fraîche can also be replaced with Greek yoghurt or sour cream.

 
Banana Curry Sauce
  • 6 / 1 kg Bone-in, skin-on chicken thighs
  • 2 tsp Paprika
  • 1 tbsp Rosemary, chopped
  • Zest of 1 organic lemon
  • ¾ tsp Sea salt
  • ½ tsp Freshly milled black pepper
  • 3 tbsp Chicken schmaltz or ghee, melted
  • 1 Very ripe banana
  • 1 tsp Lemon juice
  • 150 g Crème fraîche
  • 1 tbsp Coconut flakes
  • 2 tsp Curry powder
  • Salt, to taste
  1. Pat the chicken thighs dry and place in the roasting tin. Mix the paprika, rosemary, lemon zest, salt and pepper. Rub the chicken well with mixture. Heat the schmaltz or ghee in a small pan and pour over the chicken thighs. Let marinate for an hour at room temperature, or chill overnight, and bring it to room temp for 30 minutes before cooking.
  2. Preheat the oven to 190C/375F. Heat remaining schmaltz in a large cast iron or regular skillet on medium high to high heat.
  3. As soon as the schmaltz is hot, lay chicken thighs, skin-side down in the pan. Sear the thighs without moving them for 3 to 5 minutes or until nicely browned. Turn the thighs over in the pan so they are skin-side up. If you are using a regular skillet, then transfer the chicken thighs to an oven safe baking tray.
  4. Roast the chicken in the middle of the hot oven for about 25 minutes until cooked through. Meanwhile prepare the sauce. Finely mash the banana and lemon juice with a fork. Add crème fraîche, coconut and curry powder, mix well and season. Serve the sauce with the chicken.
