For once, the pancakes are not served sweet for breakfast, but in a savoury version with smoked salmon and a hazelnut vinaigrette as a light meal. I used a springform pan to make a huge baked pancake, but you can make the regular one in a skillet. Besides smoked salmon, you can also serve the pancakes with poached eggs, or some stirfried chicken.

I have ZERO idea why Blogger has UNpublished my post! It simply told me that my post violated the community guides that I DIDN'T. It's just a recipe, I didn't publish anything unusual. Do anyone know what to do? I am repbulishing this post, hopping that Blogger will READ it through and publish it again. Sorry if I have lost all of your comments.

Ready for the fluffiest egg ever? Then switch on the oven, get the Parmesan and eggs out of the fridge and let’s make some fluffy egg clouds for breakfast or brunch! The egg whites must be whipped until stiff peaks have formed before folding in chives and Parmesan. They are then formed into 4 clouds and baked in the oven for 4 minutes before sliding the egg yolk into the well in the center and bake for a further 2-4 minutes, depending on how brown you like them.

A salad to kick start the day or as a light "brinner" (breakfast for dinner), this flavourful breakfast salad has all the makings of a much-loved classic BLT: crispy bacon, fresh romaine lettuce, juicy grape tomatoes, sourdough croutons and a creamy mayo-based dressing. And of course some soft boiled eggs to add protein and to keep you satiated until lunchtime! Leave out the croutons if you are on low carb way of eating.

Pollo en pepitoria, or chicken in almond sauce, is a Spanish-inspired feast of chicken braised in saffron, almonds, bay leaves, nutmeg, broth and sherry. The unique sauce is enriched and thickened with almonds and 4 hard-boiled yolks. It’s nutty, creamy and so delectable that you don’t want to miss out.
Pepitoria refers to the meat, usually poultry and game birds, cut in piece, or only offal and enriched with hard-boiled egg yolks. Though almonds are a very common addition, but are not really a necessity.

Chicken Marengo

A classic one pot chicken dish with juicy chicken legs, tomatoes, porcini mushrooms and optional Brussels sprouts from French cuisine. Traditionally it's garnished with a fried egg and crawfish. I happened to have some hard-boiled eggs left, so I just used it as the garnish. Leave out the Brussels sprouts or use more mushrooms instead if you prefer. Perfect for a warming, moreish family meal.
Chicken Marengo was one of Napoleon's favorites and is named after the Battle of Marengo on June 14, 1800, in which Napoleon turned a near defeat into a victory and thus secured his control of Italy.

German asparagus meets Italian balsamic vinegar, then covered with a poached egg on a bed of baby spinach and served with a simply green sauce. If classic Hollandaise is becoming a little too monotonous for you, you should definitely try this seasonal explosion of flavour. It’s simple and fresh and goes great with steak or chicken or to enjoy as a light meal. Shave some Parmesan over if desired.

The secret to stress-free, relaxed entertaining is with these easy nobake tartlets using premade tart shells from a local grocery store for convenience. Not only are they absolutely tasty, they are also ready in 15 minutes, meaning you can whip it up at a moment’s notice. Use all-butter crust shells if you can, after all, nothing beats what butter can provide. Otherwise, I would recommend making your own using this or this.

Son-in-law Eggs - Thai Fried Eggs

Wednesday, January 29, 2025

Son-in-law eggs (kai loug kheuh), a Thai street food staple, are pre-boiled for 6 minutes to achieve their coveted creaminess, then dropped into piping hot fat / oil to crisp up.
In Thai legend, these fried boiled eggs were cooked by a protective mother who was less than happy with how her daughter was being treated by her son-in-law. So, she served him two deep-fried eggs as a delicious warning that a certain pair of his own will be next in line for the deep fryer.
Gruesome lore aside, these eggs are tangy, sweet, salty, and savory and are a hit with kids, namely for their crisp golden exterior, creamy centre and the rich, sweet and sour caramel sauce they’re coated in. This recipe from Delicious is a more adult version spiced up with fresh and fried chilli peppers.

If you’re a fan of traditional seafood boil or the viral onion boil that has recently been circulating on youtube and tiktok, or simply because you love eggs, garlic and butter, you need to try this soft egg boil. The preparation is slightly different than the traditional boil, but it's equally buttery and downright delicious. The sauce comes together in minutes, and is so saucy and flavourful you will want to enjoy every morsel soaked up with bread, rice or pasta. If you ain't fancy for soft-boiled eggs, simply hard boil them.

Asian Marinated Eggs

These marinated eggs are soft/hard boiled eggs soaked in a savory Asian marinade made with gluten free soya sauce, coconut sugar, rice vinegar, broth, spring onion, garlic, ginger and sesame seeds, transforming them into the perfect low carb snack or enjoying them over some steamed rice or noodles. Soak the eggs for at least 2 hours, preferably overnight or up to 24 hours. I wouldn't leave the eggs in the marinade for longer than 24 hours as they can get pretty rubbery. Store the eggs in an air-tight container for a week.

Baked Spinach and Tomato Omelette

This is a great breakfast or brunch on weekend or any time you have company. It is low-carb, high-protein, full of delicious baby spinach, cream, Parmesan cheese, and of course lots of eggs! Use a terrine if you have one, otherwise, a loaf pan will work just fine. I used a silicone loaf pan and it spread a bit in the middle since the omelette mixture was heavy. You can also make this in a 20cm round cake pan.

Sweet Potato and Beluga Lentil Salad with Poached Egg

Wednesday, August 28, 2024

With this salad, you don't have to choose between nutrients-dense black lentils and sweet potatoes. Together with some fresh herbs and a poached egg, you can expect a real flavour experience. If you can't find beluga lentils, use French puy lentils. They both share the same size and texture and also hold their shape well when cooked. When poaching eggs, use the FRESH ones, ideally at room-temperature, as older eggs tend to have watery egg whites that won't closely surround the yolk when poached.
